Today’s Coffee: 28th February 2024

What the heck is this?

  • Coffee Weight: 15g (pre-grind)
  • Grind size: 1Zpresso QS @ 1.8 (4.05mm)
  • Pre-grind anti-static water: 3 drops in with the beans
  • Water temperature: 88°
  • Funnel warming water: 400ml @ 88°
  • Water hardness: medium (calcium carbonate 100–200ppm)
  • Method: Tetsu Sweet and Acidic (52:38)
  • Beans: Redemption Rubén Ortega

Comments

  • I realised that I did a sweet and light yesterday
  • That’s not what got me the extra half moon last time
  • It was the acidic variation what did it
  • Clear in 2:40

Pours (target weight and time in parenthesis)

  • First (52g in 10s): 3g over 1s early. Overenthusiastic.
  • Second (38g in 10s): 2g under 1s late. Underenthusiastic.
  • Third (135g in 10s): Rare that I nail this one. Auspicious.

Tasting Notes

Nose:​ Getting more savoury notes alongside the sweet fruits today— fried rice but one that has pineapple in it.

First taste:​ Big bright plums with soy sauce on the exit. There’s something else in the aftertaste that I can’t place yet because I’ve said “plum” so many times wrt these beans that that’s all my brain will give me now.

Second taste:​ Damn, this brightness is something else. There’s the initial fruity hit which is obviously great then it has this secondary juicy explosion as it hits the back of the mouth and it is so much fun.

Bitterness is much reduced. There’s still a hint of it and I think an even coarser grind could reduce it further, but tbh it’s balanced by everything else that’s going on that it’s not a huge concern.

Certainly not enough of a concern to stand in the way of an extra half moon.
